Twist Bakery & Cafe – Additional Information

Every business has its own story. Businesses that are dedicated gluten free are particularly rich in passion and history. This section is dedicated to the people working hard every day to provide safe gluten free food to those that need it and honor them.

Twist Bakery & Cafe opened its first location in 2011. As their name implies they offer traditional foods, but with a twist! They never use artificial coloring, corn syrup, hydrogenated fats, nuts, peanuts, or a whole host of items on their “No-No” list found hereOpens in a new tab..

I would have loved a spot like Twist when I was younger and busy raising my three active children. A place with variety, a clean and welcoming atmosphere, friendly servers, and natural ingredients.

Kathryn Ernst, Owner, Twist Bakery & Cafe

Kathryn Ernst’s journey that led her to open Twist Bakery & Cafe started in her teen years when she started developing allergies to many different things starting with strawberries and leading down the road to cutting out gluten. She discovered that with her allergies she had to plan ahead and bring her own meals when eating outside her home.

Handcrafted. Quality Ingredients. It’s just what we do.

Twist Bakery & Cafe

The bread was the introductory item that led to her experimentation in the kitchen with different baked goods. She worked an entire year on that first loaf of bread to perfect it and work it until it was acceptable to her and her family. From there she moved on to other items, using the same gluten free flour mixture for all of them.

Realizing other families must have the same issues, she took her recipes and hired pastry chefs and cooks to create the vision she had for Twist Bakery & Cafe.

Fawn

My passion is supporting those who need to be gluten free. After my family had to transition to eating gluten free I realized how difficult it is. It is more than finding a recipe. It is about how to navigate social situations, deal with isolation, and other things that come along with it. I live in Oregon with my family, cats, and chickens.
