Senza Gluten – Additional Information

Every business has its own story. Businesses that are dedicated gluten free are particularly rich in passion and history. This section is dedicated to the people working hard every day to provide safe gluten free food to those that need it and honor them.

Senza Gluten developed from the inspiration and passion of Chef Jemiko L Solo. He started his culinary career in (the country of) Georgia as a teenager. His dream someday was to open an Italian restaurant someday.

He once showed me his handwritten recipe book from this time – dozens of recipes he had learned or developed himself, the margins flooded with notes about ingredients and technique.

Senza Gluten

The Chef responsible for this amazing, completely gluten free Italian dreamscape does not need to eat a gluten free diet due to Celiac Disease or otherwise. It is completely from his empathy, kindness, passion, and generosity to his friends that he translated the traditional Italian recipes he had learned into “Senza Gluten” – without gluten.

…one of his old bosses, a six-foot-six chef from northern Italy, dropped by for some lasagna on the house. “That’s my dish,” he told Solo, with mock severity. “No, it’s not yours,” Solo fired back. “It used to be yours—not anymore.”

Chef Jemiko had friends with Celiac Disease who required a gluten free diet and made them a promise to open a restaurant they could enjoy great food made safely. He went on to open Senza Gluten with the vision that everyone should be able to enjoy the delicious food he’d learned to make, and no one should be left out.

He remains enthusiastic to this day, he loves seeing the guests enjoy his food and hearing from people the relief when they discover they can eat anything on the menu in addition to their rave reviews on the food.

The customers provide constant inspiration for him. When someone tells him they haven’t been able to find a particular item, he takes it as a challenge to create the best one possible and experiments in the kitchen until he can work out the perfect formula.
