Gluten Free Nachos With Beef And Veggies

Nachos are simple but taste great and are quick to make. Use the below recipe for cheese sauce or make it simple by melting shredded cheddar directly on the tortilla chips.

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 1 cup corn optional
  • 1 cup other assorted vegetables optional
  • 2 tbsp taco seasoning gluten free
  • 1 cup water
  • sour cream as desired
  • 1 avocado sliced
  • ¼ cup cilantro
  • tortilla chips
  • salsa optional

For The Cheese Sauce

  • 2 tbsp butter
  • ½ tbsp gluten free flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 tsp Magical Seasoning Mix


  • Cook and break up ground beef, add the corn.
  • Chop up the onion and other veggies (optional) and add to the pan with ground beef. Add taco seasoning.
  • Add water to the pan with beef mixture. Reduce heat to medium and simmer until water has evaperated.
  • While the beef mixture is simmering, make the cheese sauce.
  • Melt the butter in a sauce pan and add the flour and Magical Seasoning Mix.
  • Add the milk and cook over medium high heat until the roux thickens the milk.
  • Add the shredded cheese and stir. Remove from heat.
  • Place the tortilla chips on plates and top with cheese sauce, beef mixture, sour cream, avocado, and salsa.
