Lamb Pita

Not only is this dish colorful and pretty, it has amazing flavor! It was one of my favorite dishes we sold on the food cart.

  • 1 recipe lamb meatballs meatballs and tzatziki sauce
  • 1 recipe pizza dough
  • ½ cup gluten free flour for dusting
  • 1 heirloom tomato sliced
  • 1 red onion sliced
  • salad
  • 1 cup feta cheese


  • Make the pizza dough recipe and split into 8 equal parts for the final rise.
  • Dust the cutting board with gluten free flour and roll a ball of pizza dough in the flour. Roll out the dough in a circle until it is about 8 inches in diameter.
  • Repeat with all 8 dough balls.
  • Heat a cast iron to medium-high heat.
  • Cook the pitas one at a time until they start to puff up on each side. Set aside.
  • Make the lamb meatballs and taziki sauce.
  • Put it all together with the lamb meatballs, salad, tomatoes, and red onion. Top with feta cheese and tzatziki sauce.
