There is something about how fresh mozzarella, juicy tomato, and pesto pair together that is so tasty and popular. This was one of our staples on the food cart and was very popular.

  • 1 ⅓ lbs ground beef
  • 1 tbsp olive oil
  • 4 slices fresh mozzarella
  • 1 heirloom tomato cut into thick slices
  • 4 tbsp basil pesto
  • 4 burger buns or sourdough waffles


  • Heat a skillet and add the olive oil. Place the burgers in the pan and cook to desired internal temperature.
  • When the burgers are almost done, add a fresh mozzarella slice to each one and allow it to melt slightly. You can add a small amount of water and put a lid on the pan to melt it more quickly.
  • Allow the burgers to rest for a few minutes after they are done.
  • While the burgers rest, toast the burger buns in the pan.
  • Assemble the burgers by adding the slices of tomato and 1 tablespoon of pesto per burger.
