Servings: 12 slices

  • 6 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1 tsp nutmeg divided
  • 1 tbsp cinnamon divided
  • 12 slices gluten free bread

  • Mix eggs, milk, and vanilla together in a low dish wide enough to put at least two slices of bread side by side.
  • Add about 1/3 of the total nutmeg and cinnamon and mix thoroughly.
  • Heat the frying pan or electric skillet to medium-medium high. Add butter to the pan before each peice of bread.
  • Soak slices bread for two minutes per side then add to the pan. Cook until browned on both sides and the middle starts to puff up.
  • Add the remaining spices as the floating spices are used up in the egg batter. Mix well each time before adding more slices of bread.
  • Serve with butter and maple syrup or any other toppings you like.

My passion is supporting those who need to be gluten free. After my family had to transition to eating gluten free I realized how difficult it is. It is more than finding a recipe. It is about how to navigate social situations, deal with isolation, and other things that come along with it. I live in Oregon with my family, cats, and chickens.
