Mix together the sourdough starter and milk and then add the dry ingredients and stir until no lumps remain.
Allow the waffle mix to sit for 30 minutes to 2 hours.
While the waffle mix is resting, prep the rest of the ingredients.
Prepare 3 dishes to dip the chicken in.
The first should have flour, the second should have the egg and milk, and the third should have breadcrumbs.
Divide the seasonings between all 3 dishes. Mix each of them well. Set aside.
Next, prepare the spicy syrup. Add the syrup and seasoning together and mix well. Set aside.
After the batter has rested, heat up the waffle iron. Use a nonstick spray and cook per manufactuerer's instructions.
Batter the chicken strips by putting them in the flour, then the egg mix, then the breadcrumbs. Fry the chicken at 350° for about 5 minutes or until cooked through and the breading is browned and crispy.
When the chicken is done, chop it up into bite-size pieces.
Arrange the waffle on a plate with the pieces of chicken on top. Drizzle the syrup over the top and garnish with green onions.
