Coconut Bon-Bons (Gluten Free!)

Preparation Time: 30 minutesCooking Time: 5 minutes

These are so easy with no cooking required except for the microwave! We used to call this "potato candy" growing up and it is such a fun thing to do with kids and watch the potato turn from dry to a mushy liquid while you make this.

  • 1 potato, peeled
  • 1 bag shredded sweetened coconut, divided
  • 1 bag powdered sugar, divided
  • 1 bag chocolate chips
  • 1/3 cup coconut oil

  1. Cook the potato in the microwave until it is fork mashable.
  2. Add about 1 cup of powdered sugar and mix. The potato should disintegrate into mush. Stir until smooth and no lumps remain.
  3. Add 1 additional cup of powdered sugar and 2-3 cups of shredded coconut.
  4. Mix until it comes together. Depending on the size of potato you used, you may need to add more coconut and powdered sugar. Add until it becomes thick enough to form balls.
  5. Roll coconut mixture into balls and allow to sit. Usually enough time to finish rolling the rest of the mixture and making the chocolate coating is enough.
  6. Microwave the chocolate chips and coconut oil together for 30 seconds and then mix. Put in for 10 seconds at a time. Do not overheat.
  7. Dip the coconut balls into the chocolate mixture and set on wax paper until they are set. Optional: roll in cocoa powder to get the powdered look.
  8. Note: coconut oil melts above 70 degrees so they may need to sit overnight to get the hard shell.

My passion is supporting those who need to be gluten free. After my family had to transition to eating gluten free I realized how difficult it is. It is more than finding a recipe. It is about how to navigate social situations, deal with isolation, and other things that come along with it. I live in Oregon with my family, cats, and chickens.
