
Ingredients
- 1 potato, peeled
- 1 bag shredded sweetened coconut, divided
- 1 bag powdered sugar, divided
- 1 bag chocolate chips
- 1/3 cup coconut oil
Instructions
- Cook the potato in the microwave until it is fork mashable.
- Add about 1 cup of powdered sugar and mix. The potato should disintegrate into mush. Stir until smooth and no lumps remain.
- Add 1 additional cup of powdered sugar and 2-3 cups of shredded coconut.
- Mix until it comes together. Depending on the size of potato you used, you may need to add more coconut and powdered sugar. Add until it becomes thick enough to form balls.
- Roll coconut mixture into balls and allow to sit. Usually enough time to finish rolling the rest of the mixture and making the chocolate coating is enough.
- Microwave the chocolate chips and coconut oil together for 30 seconds and then mix. Put in for 10 seconds at a time. Do not overheat.
- Dip the coconut balls into the chocolate mixture and set on wax paper until they are set. Optional: roll in cocoa powder to get the powdered look.
- Note: coconut oil melts above 70 degrees so they may need to sit overnight to get the hard shell.
