Black and Blue Burger

A very popular dish on the food cart, this burger can be served on a regular bun or on sourdough waffles as shown in the picture.

  • 1 ⅓ lb ground beef for 1/3 lb burgers
  • 1 onion sliced
  • 1 tsp Magical Seasoning Mix
  • 1 tbsp cajun seasoning
  • ½ cup bleu cheese
  • 8 slices bacon
  • 4 burger buns


  • Cook the bacon in a large frying pan and then set aside.
  • Form 4 patties from the ground beef. See note 1.
  • Place the burger patties in the frying pan. Add the sliced onions to the side and cook to desired doneness.
  • Sprinkle half of the seasoning mix on the top of the burgers. After the first side is cooked, turn over and add the rest of the seasonings.
  • Turn the burgers again to cook both sides with seasoning. Add the bleu cheese to the top and melt while the burger finishes cooking.
  • Take the burgers out and allow to rest.
  • Toast the buns in the pan if desired then add the onions and bacon to the burger patty on the toasted buns. Serve.


  1. You can use less or more ground beef depending on how big you want the burgers. On the food cart, we made very large burgers of almost a half-pound. But you can make them smaller, if you want quarter-pound burgers, reduce the ground beef to 1 lb total.
