Real Food Eatery

Real Food Eatery was founded in 2016 by Mike Mangold and John Colasante.

Mike was inspired by a reaction against “foodie” culture that celebrates style and how food looks over flavors and taste. There is a trend where food is poked and prodded to beautify it instead of working to develop delicious and nutritional dishes. These dishes are even made with low-quality ingredients at some establishments because the substance is not the priority.

Mike believes a restaurant shouldn’t revolve around the theater of cuisine but around the quality and integrity of the food.

Enter Real Food Eatery with a goal to put food first, real food. And to allow the real food to guide the theatrics found in the restaurant world.

I decided to launch RFE in order to change the way that Philadelphia thinks about food.

John joined Mike in founding Real Food Eatery, but his perspective brings something different and special to Mike’s initial vision.

He was raised by parents who were focused on real food and nutrition when everyone else was going towards convenience, sugar, and preservatives including a fitness coach for a step-father.

Over time he developed his own perspective on food that sees wisdom in looking back, not forward. He found wisdom in the evolution of his ancestors instead of the food pyramid and went back to nature for his food advice.

While he was going through this discovery of food philosophy, he and Mike had met and John admits that if it weren’t for Mike Real Food Eatery would have still been a dream.

I decided to create Real Food Eatery because, well, someone had to do it. And Mike made me.

Both John and Mike together have brought their ideas and combined them into the success that Real Food Eatery is.

They decided early on that ingredients are what matter, not traditional chef wisdom or what “most kitchens” do. They take the more expensive, time-intensive, and difficult way to get to their end product: the food. They apply the logic of “eating the rainbow” to make balanced meals that are nutritious and flavorful all at once.

They want their menu and chefs to be full of knowledge to provide nutrition and substance to their guests. They rely on Mother Nature to influence their food and allow the food to drive the aesthetics.
