As she entered culinary school, Elena Linfesty faced a new diagnosis of Celiac Disease. Instead of discouraging her and changing her path she adjusted and focused on making the best gluten free products out there.

Everyone deserves to eat delicious food, regardless of special dietary needs or food allergies

Inspired by Normandy, she opened Linette to make French Normandy pastries, bread, and other items as well as dairy-free and vegan options.

Currently, she doesn’t have a stationary location. In 2022 she will be at both the Beaverton and Forest Grove Farmers Markets.
