Kyra Bussanich has been the only person to win the Food Network show Cupcake Wars FOUR times! She didn’t take the easy route and cook with gluten on the show, she did this feat relying on the delicious gluten free recipes she’s been cooking for years.

While Celiac Disease is the most widely known autoimmune disease connected to gluten, there are many other autoimmune diseases that are exasperated by gluten as well. Kyra has had the unfortunate experience of suffering from one of these. Fortunately for all of us who can’t eat gluten, she turned this experience into delicious gluten free desserts.

After years of hospital visits and drastic drug treatments and the threat of surgery to remove part of her intestines, Kyra’s symptoms greatly improved within three days of going gluten-free– and totally abated within seven months.

What a chilling story! Personally, I have known so many people that have needed to eat gluten free for a variety of reasons, and Kyra’s story is exactly why we need to expand our thoughts from just those with Celiac Disease need to be gluten free to recognize that there are many medical conditions that are helped by a gluten free diet. This is why I use the term “medically necessary gluten free diet” on this website.

After starting her gluten free diet, she learned that textures and flavors did not necessarily come with gluten free products. She went to pastry school to learn the techniques and apply them to gluten free baking. After experimentation and lots of work, she was able to create products with a pleasant texture and flavor without gluten.

Kyra and her bakery have been featured in major publications since blowing the judges away with her gluten free delicacies.

Kyra’s favorite part of the job is playing with textures and flavors and developing exotic yet approachable pastries that delight everyone who eat them.
