These tacos were a huge hit on the food cart!

The combination of flavors and textures was perfect. They are also very hearty and filling. Try these out for a fun change in your regular recipe routine.

Korean Beef Tacos Waiting Game

The waiting might be the hardest part of this recipe!

Marinate the beef, then let sit.

Pickle the onions and let sit.

Ugh. Definitely not my forte. The thing is though, that in order for the beef to be as tender as possible, it just has to sit in that marinade for as long as possible. You can use it after about an hour, but the best results will be from overnight.

The pickled red onions are the same. They will still have the bite of fresh red onions after an hour, but if you let them sit overnight you will get the pink onions in the picture.
