These gluten free tortillas defy expectations every single time I make them.
They are soft, sturdy, delicious, and work well in just about every application! This is one of the recipes I developed on my gluten free food cart. I used these tortillas for burritos and wraps. I also fried them up for chips. I even used them as wonton wrappers!

The technique on these is not difficult. If you can make crepes or pancakes, you can make these.
In fact, these are even easier!
All you have to do is put the batter in the pan and spread it around until it goes translucent and thickens up then flip it over. Each tortilla takes about a minute total to cook.
If you are making these and want to do quesadillas you can even put cheese on top while they cook on the second side. Super easy lunch!
