Best Gluten Free Bread For Bread Pudding


Gluten Free bread is difficult to figure out how it will respond in a particular recipe based on the type of bread. I wanted to find the best bread to use for bread pudding.

The best Gluten Free bread for Bread Pudding was Canyon Bakehouse’s Hawaiian bread. The texture of the bread, combined with the flavor, beat out all the other competitors. However, some others came in close behind in our tests.

The concern for using a bread pudding recipe with gluten free bread is whether it will maintain any structure or turn to mush. We certainly had some that did that, but others that maintained integrity and made a nice texture.

The Top Gluten Free Bread To Use In Any Bread Pudding Recipe

The one that came out on top was a clear winner. After that, the next ones were all very close to each other in taste and texture. There was some trouble with the texture of some others, and not all of them were mush. Some ended up being too firm.

For each bread, I took two slices and cubed them. I placed them in pint jars, adding the egg mixture, butter, and dried cranberries. We closed the jar and shook them up, and let them sit for a few minutes. We then added a bit more egg mixture to all the jars as it was well absorbed.

I baked them in the jars and spooned them into a bowl for pictures.

I can’t sugar-coat how bad this turned out. All I can do is beg you not even to try this. Unless the result you are looking for is sweet and curdled scrambled eggs.

I cubed 2 “slices” and put them in a pint jar. I added the egg mixture and dried cranberries. I shook it up and added a bit more egg mixture after the first was well absorbed. I baked them for about 25 minutes.

After it cooled down a bit, I spooned it into a bowl for pictures and taste testing.

The best I can describe it is curdled sweet scrambled eggs. This texture and flavor do not work for bread pudding.

The only thing that saved this bread from making the bottom of the list was the curdled scrambled eggs described above. But don’t let that fool you; this bread is not one you should consider for bread pudding.

When I scooped it out into the bowl for pictures and taste tests, all I found was a gloppy mess.

The bread completely disintegrated in the egg mixture and had no shape left to it when I scooped it out of the jar.

The best description for the texture would be a comparison to grits. Certainly not what you would hope for or expect with a bread pudding.

I anticipated that this would be one of the bread brands that worked well in this application. However, the taste was just awful. The texture worked fine, but the taste ruined the entire experience.

I cubed two slices of bread and put them in a pint jar. I added egg mixture and dried cranberries and shook them. After sitting and absorbing for a few minutes, I added some more milk and egg mixture and then shook the jar again. I baked it for 25 minutes.

I scooped it out of the jar into a bowl for pictures and taste testing when it had cooled down.

This bread is one of the firmer bread brands we tested, and I was looking forward to trying this one. But when I tried it, I wanted to spit it back out again.

I’m not sure what the problem was with this bread. Others we tested used yeast, but the yeast flavor came out to play in this recipe for some reason. The taste wasn’t nearly as prominent in the french toast we tried.

When we tried Against The Grain for french toast, it landed at the very top for flavor and texture. We even rated it as five stars because it worked so well. I anticipated a repeat for bread pudding but was disappointed.

I cubed up half a baguette and added it to a pint jar. I added dried cranberries and the egg mixture and shook the jar to distribute it. After sitting for a few minutes, I added some more egg mixture and shook it again. It baked for about 25 minutes.

After it had cooled down, I spooned it out of the jar into a bowl for pictures and taste testing. I was surprised at how firm the texture was.

When we tasted it, the flavor was the same as the french toast and delicious. But what ruined it and placed it so far down the list was the texture. It was pretty firm and very chewy.

I suspect that allowing it to cool down allowed the bread to firm up and was the main difference between bread pudding and french toast results. This texture is what happens with bread that uses mozzarella cheese as a primary ingredient.

How Udi’s Multigrain Bread Works For Bread Pudding

Despite being called a “multigrain” bread, this Udi’s bread has apples in the ingredient list, which I suspect is why it is somewhat sticky right out of the package. It turned out reasonably well for Bread Pudding, but I had anticipated that it would do better due to the slightly sweet flavor.

I took two slices and cubed them. I put them in a pint jar with dried cranberries and egg mixture and shook it up. After it had absorbed the mix for a few minutes, I added some more egg mixture and shook it again. I baked it for about 25 minutes.

The flavor was ok, but not nearly as good as it should have been. It came in number 3 in our French Toast test. It came out slightly dry, which was surprising since it was sticky raw. But overall, it tasted nice and worked ok.

Schar Artisan bread benefited from the extra time it had to soak in the egg mixture before and during baking. It ranked slightly higher in the Bread Pudding vs. the French Toast test.

Franz Gluten Free Bread has a firm structure but gets soft when heated. It also is soft enough when cold to use as sandwich bread. I think both of these features played into why this bread worked so well for Bread Pudding.

The egg mixture had absorbed well into the bread and was well distributed. The yeast flavor in the bread added to the taste and the natural firmness meant that it didn’t disintegrate and go mushy. Overall, it was very decent.

The texture and flavor of this bread shot it towards the top of the list. The bread’s natural texture was not lost like many others by being soaked and shaken in a jar and then baked.

I cubed two slices and put them in a pint jar with dried cranberries and egg mixture. After I’d shaken it up, I allowed it to sit for a few minutes and then added more egg mixture and shook it again. It baked for about 25 minutes.

After taking it out, I allowed it to cool down before scooping it out of the jar for pictures and taste testing.

Unlike many others in our test, the firmness allowed it to maintain the shape of bread. The flavor of the bread was a problem in other tests, but for the Bread Pudding, it took on the taste of the egg mixture, which resulted in one of the top results.

While it came in second in the French Toast test, it came out on top here due to the flavor, texture, and overall impression. The Hawaiian bread flavor worked very well, but Canyon Bakehouse bread, in general, has a great texture. This bread is significantly smaller than their typical loaf, however.

I cubed two slices and added them to a pint jar with dried cranberries and egg mixture, and shook it to mix it thoroughly. After it sat for a few minutes, I added more egg mixture and shook the jar again. It baked for about 25 minutes.

After it cooled down, I scooped it into a bowl with a spoon for pictures and taste testing.

What made this one stand apart from the rest was the flavor of the bread. It is the only one in our test with the classic taste of either Hawaiian bread, challah, or brioche. However, the texture also pushed it to the top.

We didn’t give it a 5 star because while it was better than the rest of the gluten free brands, it didn’t quite reach the level of what I’d expect from bread pudding. However, it tasted delicious, and the texture was better than anticipated.
