All-Purpose Flour Blend Recipe

When I first went gluten-free, I tried out many different blends. In the end, I wanted to take a little bit of each one that I loved and create my perfect flour blend. And that is how I came up with this All-Purpose Flour Blend Recipe.  While developing this recipe, I went through many different versions. And I ended up defining them by date. This particular one is dated April 11, 2014, the day that I wrote and tried this for the first time.  Since that day, I have made many baked goods, cakes, pancakes, etc for my family and friends. This is also the flour recipe I used on the gluten-free food cart.  While it won’t work in every situation, this is a great base recipe to keep around. I hope you enjoy this All-Purpose Flour Blend Recipe as much I have. 

All-Purpose Flour Blend Recipe

A great basic flour that works in most recipes as a 1:1 replacement for wheat flour.

Ingredients

  • 2 cups Sweet White Rice Flour
  • 1 cup White Rice Flour
  • 1/2 cup Sweet White Sorghum Flour
  • 1/2 cup Tapioca Starch
  • 1/4 cup Potato Starch

Instructions

  1. Mix all ingredients together well and use in place of wheat flour or gluten-free flour blend in any recipe.

Important things to note: this recipe neither contains nor needs any gums (ie xanthan gum, guar gum, etc). Recipes will call for gum and note that do not add if your flour blend contains it. In this situation, you do not need to add these gums, continue on as if the blend already contains them.  The most special thing about this recipe: the combination of flours and starches. They combine and act together and in a way that seems as if there are gums.  When I first wrote the recipe, I included xanthan gum in it. The next time I forgot it. And there was no difference we could see. In fact, it seemed to produce a lighter, fluffier texture.  I hope that this recipe will be as useful for your baking endeavors as it has been for mine. This has been the cooking and baking staple I always have around.
